From Scratch Fluffy Pancakes

A from scratch fluffy pancake recipe is a lifesaver when all the kids request them on a Saturday morning! You might be like I was and, for the longest time, just thought pancakes came from a box.

But, after finding myself without a box of pancake mix over and over again, I decided I would find out how to make them from scratch. I'm so glad I did! 

 

Not only can I make them anytime I want to, but I can now choose better ingredients and control what goes into making them. I had to experiment to find a fluffy pancake recipe since my kiddos love fluffy ones. 

 

Tips for making fluffy pancakes: 

-Before starting, melt your butter so it has time to cool before adding it to your mix.

-Keep another stick to the side to grease your griddle or pan.

-Adding two eggs to the batter makes it fluffier. 

-I like to use a fork when mixing pancake batter. It always works better than a wire whisk that tends to get clumped up when done by hand. 

-You can create this mix in a larger batch and keep it in the refrigerator for the next day!

-As always, I highly recommend duck eggs when baking. Or a larger chicken breed egg. I prefer a darker-colored egg. 

-Have some local honey on hand and blueberries ready!

 

Made from Scratch Fluffly Pancake Ingredients: 

  • 2 Cups all-purpose flour
  • 1/4 cup of granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt 
  • 2 cups milk
  • 1/4 cup butter
  • 2 teaspoons pure vanilla extract
  • 1 large egg or 2 eggs 

 Ingredients for Pancakes

Instructions:

  1. Combine all your dry ingredients together. Flour, sugar, baking powder, baking soda, and salt in a large bowl. 
  2. Make a well in the center and add the milk, cooled melted butter, vanilla, and egg. 
  3. Now mix those wet ingredients (I like to use a fork), starting in the middle of the bowl, and then slowly reach out to grab the dry ingredients, folding them into the dry ingredients. 
  4. The batter should be thick and creamy. If it is too thick, add a couple of tablespoons of milk into the batter a little at a time until reaching the desired consistency. 
  5. Place the batter aside while heating your pan or griddle. 
  6. Heat your nonstick pan or griddle over low-medium heat. Using your extra stick of butter, wipe over the surface to lightly grease the pan. Butter adds great flavor too!
  7. Taking a ladle or larger spoon, pour about 1/4 - 1/3 of the batter onto the pan and spread out gently into a round circular shape with the back of the ladle/spoon. I will fill up a whole ladle for bigger pancakes. 
  8. When the underside is golden and bubbles appear on the surface, take a spatula and carefully loosen the edges of the pancake all the way around. Once the pancake is firm enough, flip it with a spatula and cook until done on both sides and golden. 
  9. Repeat steps 6-8 until all the batter is gone.

Adding Blueberries: 

  1. If you want to add blueberries, make sure they are fresh or defrosted ahead of time. 
  2. Add them to the mix at the beginning for all of them to be blueberry pancakes or at the end of the batter for a few.

Toppings: 

Now it's time to top those pancakes with your favorite fruits and honey! Here are some of our favorites: 

  • Blueberries
  • Strawberries
  • Bananas
  • Local honey
  • Madhava Organic Amber Agave nectar (My husband and I's favorite "syrup.")

Display Cottage Style: 

Because this is a baked good that is going to be eaten right away, I will not be giving you a recommendation on a basket or tin to display them in. 

 

For pancakes, it will be more about the plate! Now it's time to use those beautiful dishes displayed on the shelf and cupboards.

Tip: I opt to use our everyday white plates with my little ones, who are still at the age of breaking dishes by accident quite frequently. I suggest you do the same if you are making these for younger children.

Create a Premix Dry Pancake Mix Jar 

If you want a premix ready for a quick breakfast, create a Premix Dry Pancake Mix Jar. It's easy!

  • You will take all the dry ingredients from above and triple them.
  • If you have more room left, add one more round of dry ingredients to the jar. 
  • I like to use large-mouth glass jars, so I can easily scoop up the mix with a measuring cup. 
  • I also use them for loose grits, salt, and oatmeal.
  • Remember the labels! I love using labels because they are easy to see for quick finds and organization. It is also easy for children to see. 
  • Because I couldn't find any labels that fit my modern cottage kitchen style, I created my own! They can be printed on a 4x6 thermal label printer or label sheet in an inkjet printer.
